Chow Mein means stir-fried noodles. I used fresh tagliatelle, but any long egg pasta can be used. The dish is simple, mild in flavor, and requires few ingredients. Instead of beef, you can use chicken or pork.

Ingredients (for 4 servings):
- 400–500 g lean beef, cut into thin strips
1.5 fresh bell peppers, sliced into thin strips (preferably different colors)
250 g egg noodles, cooked and chilled
1 onion, sliced
3 cloves garlic, crushed or chopped
vegetable oil for frying - Marinade:
1 tbsp light soy sauce
pinch of pepper
1 tbsp oyster sauce
1 tbsp cornstarch
1 tbsp sesame oil - Sauce:
3 tbsp soy sauce
2 tbsp rice wine
1 tbsp sesame oil
1 tsp sugar
2 tbsp oyster sauce
Combine the beef with the marinade in a glass bowl and leave in a cool place for about 30 minutes.
In a wok or deep pan, heat about 2 tbsp oil. Add the garlic and stir-fry for a few seconds (be careful not to brown it). Add the beef and cook. Transfer the cooked beef and garlic to a plate.
Wipe the pan with a paper towel, add 2 tbsp oil and heat. Add the bell peppers and onion. Stir-fry until the vegetables soften slightly. Add the noodles, beef, and sauce. Mix everything and heat thoroughly. Adjust seasoning with soy sauce if needed.
