Honey Cake

A very easy cake to make with just a few ingredients. It’s moist and has a subtle caramel flavor. This recipe is for a small 20 cm (8-inch) round cake pan.

Ingredients: (20 cm round shape)

  • 170 g (¾ cup) light honey
  • 140 g (½ cup + 2 tbsp) butter
  • 85 g (¼ cup + 1 tbsp) dark sugar, e.g., muscovado
  • 2 eggs, lightly beaten
  • 200 g (1 2/3 cups) all-purpose flour
  • 1 tsp baking powder
  • 1 tbsp water

For the glaze:

  • 55 g (¼ cup) powdered sugar
  • 1 tbsp light honey
  • approx. 2 tbsp hot water

Instructions:

Preheat the oven to 180 °C (350 °F) and line a 20 cm (8-inch) round cake pan with parchment paper.

In a medium saucepan, combine the honey, butter, and sugar. Add 1 tbsp of water and gently heat until the ingredients are combined.

Remove from heat and stir in the eggs, flour, and baking powder. Mix until smooth.

Pour the batter into the prepared pan and bake for 40–45 minutes.

For the glaze, mix all the ingredients together and pour over the warm cake.
