Zucchini and Salami Quesadilla

One of those flavors that just keeps calling to me 😉 A wonderful combination of flavorful cured meat, mild zucchini, and refreshing mint. A perfect recipe for a light summer lunch or snack.

     

Ingredients (makes 8 quesadillas)
  • 8 wheat tortillas

  • A few slices of salami, chorizo, or any other flavorful cured sausage (e.g., paprika-flavored)

  • 1–2 zucchinis, depending on size, grated on a coarse grater

  • A handful of fresh mint, roughly chopped

  • 1 cup grated cheese (Emmental, Cheddar, or any cheese you like)

  • Neutral-flavored oil for frying

  • Lemon wedges and your favorite sauces, for serving


Instructions
  1. On half of each tortilla, evenly layer the cheese, salami, zucchini, and mint.

  2. Fold the other half over to form a half-moon shape.

  3. Heat a little oil in a skillet and fry each quesadilla on both sides until golden brown. Be careful—they brown quickly!

  4. Cut each quesadilla in half and serve with lemon wedges and your preferred sauces.
