Ginger and Rhubarb Muffins

Aromatic, healthy muffins straight from Jamie Oliver’s recipe. They taste best warm, served with a dollop of any type of cream—sour, sweet, or whipped. The health benefits of ginger speak for themselves, and here you get the best of both worlds: a delicious snack and a little wellness boost in one!

Ingredients:
  • 350 g flour

  • 1 tsp baking powder

  • ½ tsp salt

  • 325 g brown sugar

  • 1 tsp lemon juice

  • 250 ml milk

  • Zest of 1 orange

  • 4 cm piece of fresh ginger, grated

  • 1 large egg

  • 100 g + 1 tbsp melted butter

  • 300 g finely chopped rhubarb


Instructions:

  1. Preheat the oven to 180ºC (350ºF).

  2. In a large bowl, combine the flour, baking powder, salt, and 225 g of brown sugar. Mix and create a well in the center.

  3. Mix the milk with the lemon juice and set aside for a few minutes.

  4. In a separate bowl, combine the orange zest, half of the grated ginger, egg, 100 g melted butter, and the milk-lemon mixture. Add the rhubarb and mix with the dry ingredients until well combined. Fill the muffin tray with the batter.

  5. Combine the remaining 100 g brown sugar with 1 tbsp melted butter and the other half of the ginger. Sprinkle this mixture over the muffins.

  6. Bake for 25–30 minutes, or until a skewer inserted comes out clean. Serve warm with a little cream.
