The health benefits of ginger speak for themselves, and here you get the best of both worlds: a delicious snack and a little wellness boost in one!
Ingredients:
350 g flour
1 tsp baking powder
½ tsp salt
325 g brown sugar
1 tsp lemon juice
250 ml milk
Zest of 1 orange
4 cm piece of fresh ginger, grated
1 large egg
100 g + 1 tbsp melted butter
300 g finely chopped rhubarb
Instructions:
Preheat the oven to 180ºC (350ºF).
In a large bowl, combine the flour, baking powder, salt, and 225 g of brown sugar. Mix and create a well in the center.
Mix the milk with the lemon juice and set aside for a few minutes.
In a separate bowl, combine the orange zest, half of the grated ginger, egg, 100 g melted butter, and the milk-lemon mixture. Add the rhubarb and mix with the dry ingredients until well combined. Fill the muffin tray with the batter.
Combine the remaining 100 g brown sugar with 1 tbsp melted butter and the other half of the ginger. Sprinkle this mixture over the muffins.
Bake for 25–30 minutes, or until a skewer inserted comes out clean. Serve warm with a little cream.
