Mini “Amerykanki” without Ammonia – Popular Polish Cookies

As a child, Amerykanki, these popular Polish cookies, were among my favorites… until I first noticed the sharp smell of ammonia. Even today, I sometimes buy them, and luckily, I can still find versions that aren’t soaked with this additive. Today, I’m sharing a recipe for these delicious Polish cookies in a mini version and without ammonia.


Ingredients (makes about 12 cookies):
  • 100 g butter

  • 125 g sugar

  • Zest of 1 lemon

  • 2 eggs

  • 20 ml alcohol (cognac, vodka, or brandy)

  • 350 g flour

  • 2 tsp baking powder

  • 4 tbsp milk

For the glaze:

  • 150 g powdered sugar

  • 2 tbsp lemon juice


Instructions:
  1. Cream the butter with the sugar. While mixing, add the eggs one at a time. Stir in the lemon zest and alcohol.

  2. In a separate bowl, combine the flour and baking powder. Gradually add this to the batter, alternating with the milk, until smooth.

  3. Line a baking sheet with parchment paper. Shape the dough into small round mounds about 1 cm high at the center and 6–8 cm in diameter.

  4. Bake at 180ºC (350ºF) for about 10 minutes. Watch closely—they should turn lightly golden, not brown.

  5. Once cooled, prepare the glaze by gradually mixing the lemon juice into the powdered sugar until it reaches a honey-like consistency.

  6. Spread the glaze on the flat side of the cookies.
