Creamy Rice with Dill

An amazing combination I hadn’t thought of before. I first tried this rice at a Greek restaurant as a side dish for fish. It was wonderfully creamy and delicate, yet aromatic thanks to the dill. This rice is essentially prepared like classic risotto, but using long-grain rice.


Ingredients (serves 2):
  • 120 g long-grain rice

  • 1 onion

  • 1–2 tbsp butter

  • 250 ml vegetable broth

  • 1 small bunch of dill

  • 1 tbsp cream (12% or 18%)

  • Salt and pepper


Instructions:
  1. Finely dice the onion. Melt the butter in a small saucepan and lightly sauté the onion until translucent.

  2. Add the rice and briefly toast it with the onion. Pour in the vegetable broth, cover with a lid, and simmer over low heat for about 20 minutes.*

  3. Finely chop the dill and stir it into the rice along with the cream. Mix everything well and remove from heat. Season with salt and pepper to taste.

  4. Serve warm as a side dish with fish or meat.


*If the rice is still a bit firm, add a little water or broth and cook a bit longer until tender..
