Baked Chicory

An interesting combination of flavors: slightly bitter chicory, salty ham, and aromatic cheese. Chicory is a very healthy vegetable, though not very popular in some countries. Baked, especially in such a tasty combination, it’s sure to please many. Perfect for a quick, light dinner or lunch.

   

Ingredients (serves 4)
  • 8 chicories

  • 2 tsp cornstarch or potato starch

  • 150 ml milk

  • about ½ tsp grated nutmeg

  • 150 g crème fraîche or thick sour cream

  • 120 g strong-flavored grated cheese

  • 8 slices of ham (preferably cooked)

  • Salt and pepper to taste


Instructions
  1. Wash the chicories and cook them (preferably steamed) for about 10 minutes, until tender.

  2. Preheat the oven to 210°C.

  3. In a small saucepan, combine the milk with the starch. Heat gently over low heat, stirring constantly, until the mixture thickens slightly. Season with salt, pepper, and nutmeg. Stir in the crème fraîche or sour cream and heat for about 1 more minute. Remove from heat and add half of the cheese, mixing well.

  4. Wrap each chicory with a slice of ham and place them in a baking dish. Pour the cheese sauce over the top and sprinkle with the remaining cheese.

  5. Bake for about 15 minutes, until golden and bubbling.
