Chicken Quesadilla

Here’s another quesadilla recipe, this time perfect for meat lovers. Whoever invented this dish deserves a medal — it’s delicious, filling, and quick to prepare. You can get creative and add your favorite ingredients, but the essentials are a tortilla and cheese, which melts to hold everything together. The other fillings are completely flexible.

   

Ingredients (makes 8 quesadilla pieces)

  • 4 flour tortillas

  • About 250 g cooked chicken breast, pan-fried, baked, or roasted (well-seasoned with your favorite spices)

  • About 100 g grated cheese (I used cheddar, but any good-melting cheese works)

  • 2 tbsp chopped fresh cilantro

  • Oil for frying

  • Guacamole, for serving (or any favorite dip)


Instructions

  1. Assemble the quesadilla:
    On half of each tortilla, evenly spread the chicken, cheese, and cilantro. Fold the tortilla over.

  2. Cook:
    Heat a little oil in a skillet over medium heat. Fry the folded quesadillas until golden brown on both sides and the cheese is melted.

  3. Serve:
    Cut each quesadilla in half and serve with guacamole or your favorite dipping sauce.
