The best fruit cakes are always made with seasonal fruits. Right now, plums are at their peak, so it’s the perfect time to try new recipes. Here’s a simple one for you—most ingredients you probably already have at home, and the rest can be easily found at your local store.

Ingredients:
Cake:
- 150 g (1¼ cups) flour
- 1 packet of cream or vanilla pudding powder
- 120 g (½ cup) soft butter
- 60 g (¼ cup) sugar
- 1 egg
- ½ tsp baking powder
- 1 tbsp rum
- 500 g (about 1 lb) ripe plums (pitted and halved)
Crumble:
- 100 g (¾ cup) flour
- 75 g (⅓ cup) soft butter
- 50 g (¼ cup) sugar
- 2 packets vanilla sugar
- 1 tbsp cinnamon
Instructions:
Prepare the cake dough: Combine all the cake ingredients and knead into a smooth dough. Press the dough into the springform pan, forming a low edge.
Prepare the plums: Wash, halve, and pit the plums. Arrange them evenly on top of the dough.
Make the crumble: Mix all the crumble ingredients by hand until crumbly. Sprinkle over the plums.
Bake: Preheat the oven to 180 °C (350 °F) and bake the cake for about 35 minutes, until golden and cooked through. by hand and crumble on the plums. Bake the cake at 180 ° C for approx. 35 minutes.
