Ingredients:
1 onion, diced
500 g green asparagus
2 tbsp butter
500 ml vegetable broth (can use stock cube)
250 ml milk
approx. 150 ml heavy cream
salt
pepper
1 tsp sugar
2 tbsp lemon juice
a few slices of bread for croutons
Instructions:
Cut the bread into small cubes (you can season with your favorite herbs), spread on a baking sheet, and bake at 180ºC (350ºF) for about 6–7 minutes. Be careful not to over-brown them.
Peel the asparagus, trim off the woody ends, and wash. Cut into pieces, keeping the tips whole.
Melt the butter in a small pot and sauté the onion until translucent (about 3 minutes). Add the asparagus and sauté for another 2 minutes.
Pour in the broth and milk, and cook for about 10–15 minutes until the asparagus is tender. Remove the asparagus tips and set aside.
Blend the remaining soup until smooth. Add cream, salt, pepper, sugar, and lemon juice.
Serve the soup with croutons and the reserved asparagus tips.
