Commercy Madeleines

Light and fluffy, these madeleines are irresistible—you could eat them endlessly. I found this recipe on the blog La cuisine de Bernard. The batter should be chilled for at least 2 hours before baking.

   

Ingredients
  • 2 whole eggs

  • 1 egg yolk

  • 120 g flour

  • 100 g sugar

  • 100 g butter with a pinch of salt (or lightly salted butter)

  • 1/3 tsp baking powder

  • Zest of half a lemon


Instructions
  1. In a bowl, combine the eggs, yolk, sugar, and lemon zest. Whisk lightly until blended.

  2. Add the baking powder. Add 1/3 of the flour and mix well, then repeat with the remaining flour in portions, mixing thoroughly each time.

  3. Melt the butter in a bain-marie or microwave (it can be warm but not hot) and stir it into the batter. Mix well.

  4. Refrigerate the batter for at least 2 hours (or overnight).

  5. Preheat the oven to 190°C.

  6. Lightly grease a madeleine pan and dust with flour. Fill each cavity ¾ full with batter.

  7. Bake for about 13 minutes, or until a skewer inserted comes out clean.


These Commercy madeleines are perfectly light, fluffy, and slightly buttery, ideal with a cup of tea or coffee!
