In a bowl, combine the eggs, yolk, sugar, and lemon zest. Whisk lightly until blended.
Add the baking powder. Add 1/3 of the flour and mix well, then repeat with the remaining flour in portions, mixing thoroughly each time.
Melt the butter in a bain-marie or microwave (it can be warm but not hot) and stir it into the batter. Mix well.
Refrigerate the batter for at least 2 hours (or overnight).
Preheat the oven to 190°C.
Lightly grease a madeleine pan and dust with flour. Fill each cavity ¾ full with batter.
Bake for about 13 minutes, or until a skewer inserted comes out clean.
