Lohikeitto – Finnish Creamy Salmon Soup

As the days grow colder, nothing beats a warming bowl of soup. One of my favorites is this Finnish-style salmon soup, rich and creamy with a hint of dill. For me, those flavors alone are reason enough to make it!

 

 

Ingredients:

  • About 400 g salmon fillet, cut into large cubes

  • 1 leek, sliced into rounds

  • 1 large onion, thinly sliced

  • 1 carrot, diced

  • 4 potatoes, cut into large cubes

  • 1 small bunch of dill, finely chopped

  • About 100 ml cream (18% or 36%)

  • 3–4 allspice berries

  • 2 bay leaves

  • About 1.5 L fish stock

  • 1 tbsp butter

  • Salt and pepper, to taste


Instructions:

  1. Sauté the vegetables:
    In a medium saucepan, melt a little butter. Add the onion, leek, and carrot, and sauté until the onion softens.

  2. Add the stock and spices:
    Pour in the fish stock, then add the bay leaves and allspice berries.

  3. Cook the potatoes:
    After a few minutes, add the potato cubes. Cook until the potatoes are tender.

  4. Add the salmon:
    Gently stir in the salmon and cook until it’s just done.

  5. Finish the soup:
    Remove from heat, then stir in the cream and chopped dill. Season with salt and pepper to taste.


Serve hot for a comforting, aromatic soup that’s perfect for chilly days — creamy, fragrant, and full of delicate salmon flavor.
