A silky smooth cauliflower cream soup, perfectly enhanced by the smoky flavor of bacon and crispy fried potatoes.
Rösti is a traditional Swiss dish resembling a potato pancake. Depending on the version, onions or bacon are added. Unlike traditional Polish potato pancakes, rösti is made from boiled potatoes grated on a coarse grater.

Ingredients :
- 1 medium onion, diced
- 500 g (1 small head) cauliflower, cut into small florets
- 4 medium potatoes
- Butter for frying
- Oil for frying
- 750 ml (3 cups) vegetable broth
- 50 g smoked, aged bacon
- 150 g crème fraîche
- Salt and pepper
- Optional: chili flakes
Instructions:
Peel and wash the potatoes. Dice two of them and set the remaining two aside.
In a medium pot, melt 1 tbsp butter and sauté the onion until translucent. Add the vegetable broth, diced potatoes, and cauliflower. Cook until vegetables are tender (about 20 minutes).
Cut the bacon into strips. Slice the remaining potatoes into thin rounds (or grate them using a coarse grater or mandoline). Season with salt and pepper.
Heat 1 tbsp oil in a pan and fry the bacon until crispy. Remove and set aside.
Shape the potato strips into small patties and fry in the bacon fat until golden brown. Remove and set aside.
Once the vegetables are tender, purée them using a hand blender until smooth. Stir in the crème fraîche and season with salt, pepper, and optional chili flakes. Heat through and remove from the stove.
Serve the soup hot, garnished with the crispy rösti and bacon.
