Plum Cake with Cinnamon Crumble

The best fruit cakes are always made with seasonal fruits. Right now, plums are at their peak, so it’s the perfect time to try new recipes. Here’s a simple one for you—most ingredients you probably already have at home, and the rest can be easily found at your local store.

(For a 26 cm / 10-inch springform pan)

Ingredients:

Cake:

  • 150 g (1¼ cups) flour
  • 1 packet of cream or vanilla pudding powder
  • 120 g (½ cup) soft butter
  • 60 g (¼ cup) sugar
  • 1 egg
  • ½ tsp baking powder
  • 1 tbsp rum
  • 500 g (about 1 lb) ripe plums (pitted and halved)

Crumble:

  • 100 g (¾ cup) flour
  • 75 g (⅓ cup) soft butter
  • 50 g (¼ cup) sugar
  • 2 packets vanilla sugar
  • 1 tbsp cinnamon

Instructions:

Prepare the cake dough: Combine all the cake ingredients and knead into a smooth dough. Press the dough into the springform pan, forming a low edge.

Prepare the plums: Wash, halve, and pit the plums. Arrange them evenly on top of the dough.

Make the crumble: Mix all the crumble ingredients by hand until crumbly. Sprinkle over the plums.

Bake: Preheat the oven to 180 °C (350 °F) and bake the cake for about 35 minutes, until golden and cooked through. by hand and crumble on the plums. Bake the cake at 180 ° C for approx. 35 minutes.
