Fluffy and moist muffins. A great way to use very ripe bananas — the ones I like to call “ready to go”! 😉

Banana, Honey & Cinnamon Muffins
(Makes 12 muffins)
Ingredients:
- 300 g flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- A pinch of salt
- ½ cup brown sugar (Demerara or Muscovado)
- 75 g melted butter
- 125 ml milk
- 2 tbsp liquid honey
- 2 eggs
- 1 tsp vanilla extract (or vanilla sugar, but reduce the brown sugar slightly)
- 2 very ripe bananas, mashed with a fork
Instructions:
Preheat the oven to 180°C (356°F) and line a muffin tin with paper liners.
In a large bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt. Add the brown sugar and whisk to combine.
In a separate bowl, mix the melted butter, milk, honey, vanilla, eggs, and mashed bananas until well combined.
Pour the wet ingredients into the dry ingredients and mix gently until just combined — don’t overmix.
Divide the batter evenly among the muffin liners.
Bake for about 20 minutes, or until a toothpick inserted into the center comes out clean.ry stick.
