Chocolate & Coconut Marble Cake

A very light cake with a subtle coconut flavor. It’s not overly sweet. The recipe is for a small loaf pan, about 20 cm (8 inches) long.

 

Marble Cake – Chocolate & Coconut

Ingredients:

  • 120 g soft butter
  • 120 g flour
  • 50 g desiccated coconut (lightly toasted in a pan for a few minutes)
  • 130 g powdered sugar
  • 3 eggs
  • 1 tsp baking powder
  • 15 g unsweetened cocoa powder
  • 1 tbsp sweet cream

Instructions:

Preheat the oven to 180°C (356°F). Grease a 20 cm (8-inch) loaf pan and dust with flour.

In a large bowl, beat the butter with the powdered sugar until creamy. Gradually add the eggs, one at a time, beating continuously.

Sift the flour with the baking powder and fold into the mixture along with the toasted coconut.

Divide the batter into two portions. Mix the cocoa with the cream and add it to one portion of the batter.

Alternate spoonfuls of the plain and cocoa batter into the prepared loaf pan to create a marble effect.

Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.

After baking, dust the cake with a mixture of powdered sugar and cocoa powder.
